Muffin Tin Meatloaves

Recipes for weaning baby vary depending on the age of the child and their food history. At about 10-12 months, most babies are ready to start eating whole eggs, wheat and tomato, although some who have had digestive issues may receive the recommendation to wait until after one year to experiment with these foods.

The following recipe for muffin tin meat loaves is a great one for a child who has already been exposed to the ingredients as it is a flavorful blend of meat and vegetables with a tangy tomato topping that babies adore! Their miniature size makes them great for making ahead and freezing.


  • 1 1/2 lbs lean ground beef
  • 1 C soft whole wheat bread crumbs
  • 1 t dried oregano
  • 1 small onion, finely diced
  • 1 1/2 C shredded zucchini (courgette)
  • 1 egg slightly beaten
  • 1/2 t salt
  • 2 T tomato concentrate/paste
  • 1/2 C grated cheddar cheese


  1. Heat oven to 400 degrees F.
  2. In a large bowl, combine all ingredients except for the tomato paste/concentrate. Mix lightly, but thoroughly.
  3. Lightly spray muffin tins with vegetable cooking spray.
  4. Place about 1/3 Cup of the beef mixture into 12 medium muffin cups, pressing down on mixture lightly.
  5. Spread tomato concentrate/paste over tops and sprinkle with grated cheese.
  6. Bake for 20 minutes or until centres are no longer pink.
  7. Remove meatloaves from pan.
  8. Cool and cut up slightly before serving to baby
  9. Serve with mashed potato or sweet potato if desired
