A Mouth Watering Easy to Make Christmas Cake Recipe

This Christmas Cake Recipe is very easy to make and even people with no experience in baking can bake this fabulous cake. Although, a Christmas cake takes a long time to prepare and bake, this recipe ensures that the savoy cake is ready in no time, thus people with little time can use this recipe with great ease. You can use this cake recipe to bake a cake well before Christmas as the cake does not spoil for a few months, if it is well covered and kept in a cool place.


  • 6 cups mixed dried fruit
  • 1 ½ cups dark brown sugar
  • 1 ½ sticks unsalted butter
  • ¾ cup sweetened chestnut puree or spread
  • ½ cup dark rum
  • Juice and zest of 1 orange
  • Zest of 1 lemon
  • 3 large eggs, beaten
  • 1 2/3 cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon cinnamon
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg

To Decorate

  • 4 tablespoons smooth apricot jam
  • 2 cups mixed glace fruits, blanched almonds, pecans and marrons glaces

Cooking Process

First pre-heat an oven at 300 F.  Also, get the cake tin ready. To do so, take an 8 inch round cake tin and line it with wax paper on the sides and the bottom. Care needs to be taken that the height of the wax paper should be more than the sides of the pan. Then, also line the outer side of the cake tin by tying the brown paper with a string. By doing so, you can prevent the cake from baking too quickly or burning in the baking process.

As this is one of the simple Christmas cake recipes, you need to just put all the ingredients, dried fruits, sugar, chestnut puree or spread, rum, orange juice and zest of both orange and lemon into a saucepan. Let the ingredients boil all the while stir the butter till it melts. When the mixture starts boiling, let it simmer for 10 minutes.  Remove from the gas and let cool for 30 minutes. This allows the fruits to soak in the juice.

The next step is to combine the beaten egg, flour, baking powder and spices to the fruits mixture. Whip the mixture well to mix the ingredients together. Then, pour the cake mixture into the tin and level the cake mixture. Now, put the cake in the pre-heated oven and let it bake for 2 hours. After 2 hours, the cake will be dry and cracked on the top. Take the cake out of the oven, remove the brown paper from the outside of the cake tin and let the cake cool for sometime.

While the cake cools, put a spoon of apricot jam into a pan and add a tablespoon of water. Cook for sometime, stirring it till it becomes a sticky glaze. Remove from the gas and let cool. If the cake has cooled completely, remove from the tin and wrap the cake in a layer of wax paper and then aluminium foil. Now, cover the top of the cake with the apricot jam glaze. After which, decorate the cake with different kinds of fruits and nuts as you like. If you want, you can also cover the fruits and nuts with another layer of apricot jam glaze.
