Cheese Sauce Recipe Ideas – quick and easy ways to use your cheese sauce

Cheese sauce from scratch is one of those recipes that everybody thinks is very difficult, but once you’ve done one you’ll be wowing your guests with macaroni cheese, cauliflower cheese, chicken and cheese – the possibilities are endless! Also very easy to do with children, experiment with herbs, such as chives, adding white wine, adding shrimps – whatever takes your fancy.

Ingredients

  • Basic Ingredients:
  • 570ml milk
  • 40g flour
  • 40g butter
  • Salt and pepper
  • 50g mature cheddar

Extra

  • Parsley
  • Chives
  • Tarragon
  • 50ml white wine
  • Shrimps
  • Anchovies

Method

  • Put the milk, butter, and flour into a saucepan on a gentle heat and using a balloon whisk, bring to a simmer. Keep whisking until the sauce becomes glossy.
  • Add your cheese of choice. This recipe uses cheddar, but you can substitute for parmesan, Lancashire – anything. Match the cheese to the dish you’re cooking it for and make sure it doesn’t overpower.
  • Keep whisking until the cheese is melted, and add salt and pepper.

Variations

  • Add shrimps when cooking with fish.
  • Substitute some of the milk (50ml) for 50ml white wine, and add chopped tarragon for a sauce that goes beautifully well with chicken.
  • Try parmesan and cheddar together, and pour over cooked macaroni. Sprinkle with more cheese on top and bake for 30mins in the oven for a lovely homemade macaroni cheese.
  • Blanch some cauliflower for two or three minutes. Add to an oven dish. This time, add a bit of grainy mustard to the sauce and pour over the cauliflower. Bake for 30mins.
  • Use when cooking fish – pop a fillet of your choice, mackerel, cod, haddock, into an oven dish. Add some small shrimps into the sauce, and cook them through. Pour this over your fish fillet and bake in the oven for about 30mins.

Tips

  • Use half the milk, and add a chopped onion for a delicious dip for bread sticks and crudités.
  • Try it as a batter. Add a little more flour and a little less milk. Dip your chosen food in – mushrooms, chicken, and pop it either into a deep fat fryer, or a saucepan filled with vegetable oil. To check the oil is at the right temperature, put a piece of potato in, and if it sizzles and is golden, it’s at the right temperature.
  • Add wilted spinach, roll in blanched lasagne sheets, and add a tomato sauce, sprinkle with cheese and bake for 40mins for delicious cannelloni.
